Ingredients (Makes 8 servings)
- 4 potatoes, peeled and shreded
- 1/2 onions, sliced (I leave out the onions)
- 1 tablespoon vegetable oil
- 8 eggs, beaten
- 3/4 cup breakfast sausage
- Salt and pepper to taste
- 3/4 cup shredded Cheddar cheese
Directions
Place the shredded potatoes in a cast iron skillet
and cook until brown. Take the potatoes out of the skillet and set aside. Meanwhile, preheat oven to 350 degrees.
Put the oil in the cast iron skillet and heat. Add onions and breakfast sausage, flipping and stirring until the sausage is brown and cooked. Stir in the beaten eggs, potatoes, salt and pepper and combine with the sausage and onions. Cook until eggs are firm. Top the Frittata with shredded cheese and place in preheated oven until cheese is melted and eggs are completely firm, about 10 minutes.
